Oakridge Smokehouse Gifts Smokehouse beef, poultry, pork and salmon, sampler and gift packs. Oakridge Smokehouse began doing business in 1946 as a locker plant (a holding place for frozen fresh and smoked meat) and a processor for smoked meat. The country farmers brought their cattle in to be processed. Peddlers who came to town to sell their wares to the local merchants smelled the aroma of fresh smoked meat and inquired about purchasing some for their own use. That was the birth of Oakridge Smokehouse.
